Glad I got a gas one. Very easy to incinerate the first few pizzas to the point of inedibility so I can’t imagine how much harder it would be without the precise, instant flame control. Thin crust, semolina for dusting is 100% mandatory, preheat on high, then gas at 50%, 90 second bake(use a timer, rotate every 30s), and you should end up with a heck of a good pizza. And replace the included peel with something decent. The 50% gas is about as hot as you can go. Even at 50% it can go from not quite done to literally on fire in maybe 15 seconds, so don’t expect to eyeball it. Adjusting the heat to fit the standard 90 second Neapolitan timing seems to be a much better option
